ABSTRACT The Objectives of the study to determine the viability of establishing a Kusina ni Juan. The Objectives in this study are the following: The research instrument used is a questionnaire to gather information about the expected service to be provided by the establishment, to determine the pricing strategy to guide the target buyer. The questionnaires were distributed to the selected respondents with a total of 384 respondents. The proposed project has a market since 85.68% of the possible customers are willing to patronize the restaurant. The business has an appropriate management structure which is composed of 25 employees. It is financially viable because the financial analysis and evaluation showed that it is profitable with three years and a half, the investment will be covered. Finally the business will generate employment in the city of Dumaguete, meet the needs and wants of the employees and resident at Dumaguete.
