520 _aA FEASIBILITY STUDY ON THE PRODUCTION AND MARKET POTENTIAL OF A SWEET POTATO-BASED PASTA ABSTRACT This feasibility study investigates the potential for manufacturing and distributing Kamotezta Pasta in Dumaguete City,Negros Oriental. Kamotezta Pasta is an innovative,sweet potato-based pasta designed as an affordable, healthy and unique alternative to traditional wheat pasta.Made primarily from locally sourced sweet potatoes,Kamotezta Pasta is rich in fiber, vitamins, and antioxidants, making it ideal for health-care IOUs consumers. The main objective of this study is to evaluate the product's viability and marketability. A standardized questionnaire was given to a sample of respondents together necessary information. The marketing findings indicate a strong interest in Kamotezta Pasta as an alternative to traditional wheat-based pasta.From a technical perspective,there is a strong preference for the 500 gram size, which can be attributed to its functionality for use in restaurants,ideal for serving portions without the risk of excess or waste.Keyfindings from the survey also highlight cost considerations and profitability factors related to the distribution and production of Kamotezta Pasta from a financial perspective. From a socioeconomic perspective, survey findings show that there is growing interest in a healthy alternative pasta. Overall,the distribution and production of sweet potato-based pasta demonstrate strong feasibility and market potential. The significant interest and willingness among respondents to incorporate it into their menus indicate a promising market Environment.
