When Essentials of Human Nutrition was first published by Oxford University Press(OUP) in 1997,there was no certainty that the book would find a place amongstthe several excellent textbooks of human nutrition. Now, a quarter of a centurylater,with the publication of the sixth edition,we consider that our original visionfor the book has been justified. Despite the proliferation of sources of nutritioninformation,there is strong evidence that Essentials is acknowledged as a leadingsource of up-to-date nutrition knowledge.The medium-sized textbook is availablein three languages and sales suggest that it continues to have widespread popular-ity in hard copy and electronic format. The fifth edition was highly commended inthe Medicine category of the 2018 British Medical Association Book Awards anddescribed as 'the most comprehensive and student friendly introduction to the sub-ject,built on carefully edited contributions from an international team of experts'.
We believed then,as we do now, that there is a need for a book in which inter-nationally acknowledged experts in their fields describe what they regard as thoseaspects of their topics that are essential to the understanding and practice ofhuman nutrition. Authors were asked not only to provide the essential informa-tion but to do so in a way that would be appropriate to the needs of the disparategroups requiring such knowledge. In addition to students embarking on a univer-sity course in human nutrition and those in training in the health and food scienceprofessions,there are many others who are increasingly appreciating the import-ance of nutrition as a key determinant of individual and public health. Many of ourclinical colleagues in medicine, dentistry, pharmacy,nursing, and physiotherapy,and school teachers, provided strong encouragement for this project,since theytoo required a simple reference text, having received little formal training in nutri-tion.Health professionals and food scientists need to be able to disentangle scien-tifically established nutrition principles from the morass of misinformation nowwidely available in the public domain.We also believed that the book would be ofvalue to those in the fitness industry and, last but not least, individual members ofthe public who have sufficient knowledge of biology and chemistry and who wishto be informed of the essentials of human nutrition.
When writing and reviewing the chapters for this edition, we were once againreminded of the need for regular updating of texts like Essentials.Since the pub-lication of the fifth edition there have been several instances in which promis-ing findings have not been confirmed,where new research has substantiated orquantified earlier observations, or where misunderstandings have been clarified.For example,in the past five years a number of randomized controlled trials havenot confirmed several of the multiple health benefits that had been claimed forsupplemental doses of vitamin D.On the other hand,co
