Abstract ABSTRACT<br/>The Objectives of the study to determine the viability of establishing a Kusina ni<br/>Juan. The Objectives in this study are the following:<br/>The research instrument used is a questionnaire to gather information about the<br/>expected service to be provided by the establishment, to determine the pricing<br/>strategy to guide the target buyer. The questionnaires were distributed to the<br/>selected respondents with a total of 384 respondents.<br/>The proposed project has a market since 85.68% of the possible customers are<br/>willing to patronize the restaurant. The business has an appropriate management<br/>structure which is composed of 25 employees. It is financially viable because the<br/>financial analysis and evaluation showed that it is profitable with three years and<br/>a half, the investment will be covered. Finally the business will generate<br/>employment in the city of Dumaguete, meet the needs and wants of the<br/>employees and resident at Dumaguete.
